Berries & Cream Princess Torte

Light and fluffy as a marshmallow, my new Princess Torte is going to send you to the hazy realm of your most pastel dream-pop fantasies. Raspberries & strawberries are suspended in vanilla cake, which I’ve swaddled in a cloud of Cointreau-kissed mascarpone with an oozing strawberry coulis in its centre. The base is the buttery shortbread and jam you know from my Shrewsburies, and it’s all draped in a delicate baby pink marzipan. She’s a dreamy homage to technicolor glam: soft, tart and enchanting. Available for the magical month of May.
